Apple and cinnamon oatmeal
Perfect for a sweet breakfast or snack, like apple pie filling with cinnamon, cloves and ginger. Delicious and ready in under 10 minutes.
I’m not a morning person, luckily I live with one making mornings easier and full of lots of eggs in all possible combinations. If you find a partner who is willing to make you poached eggs in midweek, they are definite keepers.
On weekends though I really enjoy making breakfast, as long as it does not require too much prep (I especially shy away from too much fine chopping before coffee). This recipe is simple and fast, and adapts very easily to whatever ingredients you have on. This was also my trusted, quick dessert during our dairy free period until the kids outgrew their allergies.
Materials
- 1 tbsp coconut oil
- 2 apples, chopped
- 6 tbsps oats
- 1 tsp cinnamon
- 1 tsp ginger, powdered
- 1 pinch of clove, grated
- 1,5 cups almond drink and a little extra for serving
- 1 tbsp honey for serving
- 3-4 walnuts for serving
In a small saucepan melt the coconut oil and sauté the apples until they soften and get a little color. Add the oats, spices and almond drink, stir and let simmer for 4-5 minutes. Serve in a deep bowl and top with some more almond milk, honey and walnuts.
You can replace the coconut oil with clarified butter and the almond drink with milk.
